Smoky veggie fritters
Here’s a quick mid-week recipe for smoky veggie fritters. It’s a great way to use up any vegetables sitting in the fridge that you don’t know what to do with and stops them from going in the bin.
I used grated courgette with peas and chopped spring onions, but grated carrot or some sweetcorn would also work well. I served mine with a dollop of Dr Will’s BBQ sauce and a poached egg. Perfect breakfast!
Recipe (makes 4):
- Mix 250g of veg of your choice with 50g self raising flour,1 tsp smoked paprika and a pinch each of salt and chilli flakes.
- Add a beaten egg and 40ml milk and mix well.
- Heat some coconut oil in a large pan and spoon in the mixture to make 4 fritters. Cook on each side for a couple of minutes until golden and crispy.
- Serve and enjoy!
