Breakfast tortilla pizza

I’ve been craving pizza for days. Melted cheese on a tomato base is on my brain and I can’t. stop. thinking. about. it. Even the pizza emoji is making me hungry.

So, I did what any other sane person would do and created a breakfast ‘pizza’. One with smoked salmon and an egg, naturally.

It’s by no means an authentic pizza, but it tasted delicious and that’s what matters. I got my fix then lay on the sofa basking in the melted, oozy goodness that was my breakfast.

Recipe below. Give it a go and tell me it’s not awesome…

Firstly, preheat your oven to 180C. Chop up a handful of cherry tomatoes into quarters.

Heat a pan with a little coconut oil then add your tomatoes, a pinch of oregano and a pinch each of salt and coconut sugar, and sautee until softened.

Meanwhile, place your tortilla on a tray with baking parchment and place in the oven for a couple of minutes to crisp up and prevent a soggy bottom (lol). Take your tortilla out of the oven then spread the softened tomatoes on to the base.

Next up is the cheese – the best part if you ask me. Grate a decent amount of cheese (I used EatLean Protein Cheese) and sprinkle on top of the tomatoes, then add toppings of your choice. I topped mine with some chopped smoked salmon (mainly because it needed using up) and an egg.

Bake in the oven for 10-15 mins until the cheese is melted and bubbling.

Serve and devour.
